White chocolate contains no cocoa solids at all. It is cocoa butter, milk and sugar, which is why it reads as creamy and vanilla-forward rather than bitter, and why it behaves quite differently under a pastry chef's hands. That single fact explains most of what the Snow White Chocolate Cake is doing.

It is one of ten flavours in our specialty layer cake range, and the one people reach for when the cake has to look like a gift before anybody tastes it.

How the cake is built

Four layers, starting from a delicate vanilla sponge kept deliberately moist. Between the layers goes a silky white chocolate ganache, rich but not cloying, and the whole cake is then finished with white chocolate petals made by hand in our kitchen.

Those petals are the reason the cake photographs the way it does. Each one has a gentle snap that breaks against the soft ganache underneath, so the first forkful gives you two textures rather than one. There is no colouring involved and nothing sprayed on. The white you are looking at is chocolate.

Choosing a size, and counting heads properly

Our layer cakes are larger than most people assume, so it is worth doing the arithmetic before you order. A 15cm is $95 and serves 12 to 15. A 20cm serves 20 to 25. A 25cm serves 30 to 35. Every flavour in the range sits on the same ladder, so choosing Snow White over the Thunder Chocolate or the Tres Leches never changes the price.

Count the actual guests rather than guessing. A 15cm cake looks modest on a bench and still feeds a full family gathering, and the most common ordering mistake we see is somebody buying a size up out of nerves and taking two thirds of it home.

Taste it first, with the person you are planning with

The most useful thing you can do before committing to a layer cake is to come in and eat a small piece of one. We sell cake slices from the cabinet, including the Prestige Coconut, so a tasting costs the price of two coffees.

Bring whoever else is involved in the decision, the co-host, the sibling, the other parent, and order two different slices between you. Half an hour at a table settles an argument that email cannot, and you will both remember which one you actually preferred rather than which one sounded best. If the recipient loves citrus, the Lemonade Cake wraps lemon custard in white chocolate ganache and is the closest relative to Snow White in the range. If they lean tropical, look at the Tropical Coconut; if they want something darker, the Black Forest uses white chocolate whipped cream against a deep chocolate sponge.

What we do not do, and why that helps you

We do not make custom cakes. No fondant, no custom colourings, no bespoke decoration and no off-menu designs. You choose from the flavours and finishes that already exist, which is why a cake for a wedding costs exactly what the same cake costs for an ordinary birthday.

Ordering, collecting and keeping it right

Snow White is made to order on a two-day lead time, which is shorter than most people expect. You pick your collection date and time at checkout, and the date picker only offers dates the kitchen can genuinely meet for what is in your cart. Collection only, from our patisserie inside The Welder at 20-26 Welles Street, Christchurch Central. The cake is handed over already assembled in its box, so collecting the day before is the calm option: keep it in the fridge overnight in our packaging, bring it out one to two hours before serving, and dip the knife in hot water and dry it between cuts. Carry the box from the bottom and keep the car cool. We are open 10am to 6pm Tuesday to Friday and 10am to 3pm Saturday.
