Cut into a mousse cake and the cross-section tells you everything. There is no thick crumb doing the structural work and no buttercream holding the sides upright. A mousse cake is built the other way round: a thin, dense base carrying a set, aerated cream that keeps its shape through technique rather than through flour. If you are choosing a centrepiece for a milestone — a significant birthday, a retirement, the dinner where somebody is being properly celebrated — it helps to know why this one behaves differently from a layer cake.

What a mousse actually is

A mousse is a flavour base, chocolate in our case, lightened with air and set just firmly enough to hold a clean edge. Get the ratio wrong and it either slumps into a sauce or sets into something closer to a block. Get it right and it stands up on the plate while still giving way under a spoon with almost no resistance. That narrow margin is one of the first things a pastry kitchen is judged on, and it is a large part of why Dhi Ferrari, trained at French and Italian culinary schools and eighteen years into this work, keeps mousse on the permanent menu rather than treating it as a novelty.

Our Black & White Chocolate Mousse cake is the version we are known for. Layers of velvety double chocolate mousse sit over a base that does the opposite job, and the contrast between the two is the whole design.

The base carries the other half of the work

That base is our signature flourless brownie: dense, fudgy and openly bitter, with an intense cocoa profile that stops the mousse above it reading as merely sweet. Because the brownie is built without flour, the cake is made with no added gluten — a genuinely useful thing when you are feeding a table with mixed requirements, and one of many items in our No Added Gluten Cakes & Desserts range. Our kitchen is small and without exclusive production areas for all of our different recipes, so traces may occur; nothing is guaranteed safe for severe coeliac disease.

It is worth saying plainly that no item we make is both no added gluten and no added dairy at the same time. This one contains eggs, milk, almonds and nuts.

Two sizes, and the difference between them

The 20cm cake is $100 and provides 10 to 12 servings. That is a real number, not an estimate, and it is larger than most people assume — count heads before you order, because a mousse cake is rich enough that portions are naturally smaller than a birthday-cake wedge.

If you would rather every guest had their own, the Black & White Chocolate Mousse mini is one serving each. Same flourless brownie, same double chocolate mousse, individually finished. It sits alongside the rest of our mini desserts, including the Carolina Choux and the Ferrari Rocher.

What to put beside it

Mousse wants contrast, not more of the same. The Romeo & Juliet cheesecake brings acidity and a firmer set. A sponge-and-ganache cake from our specialty layer cakes — the Thunder Chocolate Cake, say, in 15cm — gives the table a completely different texture at a similar level of finish. Taste it before you commit

This is the part worth doing with someone. Come in together, order from the cake slices cabinet and a hot chocolate, and settle the argument about texture across a table instead of over a screen. Two opinions decide an order like this faster than one does, and you will both remember the afternoon.

Ordering and collection

The Black & White Chocolate Mousse is one of our larger desserts and needs three days, rather than the two days most of our range takes. Order online and the checkout date picker will only offer dates the kitchen can actually meet for what is in your cart. Everything is collection only from our patisserie inside The Welder, 20–26 Welles Street, Christchurch Central — we do not deliver or courier, and the cake is handed to you already boxed. Collect the day before if that suits you better; it keeps in a fridge in our packaging overnight with no change to taste or texture. Bring it out an hour or two before serving, and dip the knife in hot water and dry it between slices. We are open 10am–6pm Tuesday to Friday and 10am–3pm Saturday.
