If you grew up in the nineties you remember the scene. Bruce Bogtrotter, a whole school assembly watching, and a chocolate cake so dense it looks structural.

The chocolate cake from Matilda, the inspiration for our Christchurch version

Thirty years on, the cake has escaped the film. "Matilda cake" is a search term now, millions of views behind it, home bakers still hunting the crumb.

What actually makes a Matilda cake

Not the size, though the size is the joke. The texture. A true Matilda cake is fudgy and dense, closer to a brownie than a sponge, glossy under ganache thick enough to hold a fingerprint.

Most home versions chase it with more chocolate. Wrong lever. You get there by taking the air out: less whipping, more fat, a wetter batter. The cake should weigh something.

Our Matilda Chocolate is $20, built to order at the counter, never sliced from a cabinet. Warm dark chocolate cake. Vanilla ice cream already sliding at the edges. Dark chocolate crumble for grit, hot chocolate sauce poured over the lot in front of you. Allow ten minutes, then eat it fast: the cold half is losing. Two spoons in one bowl beats two bowls. It sits on our made-to-order dessert menu, beside our Bruce / Matilda collection.

If you want to take one home

Made-to-order desserts are eaten here. For the same intensity in a cake you can carry, the Thunder is closest: chocolate sponge layered with Brazilian brigadeiro instead of buttercream. That swap is where the fudginess comes from. It drags on the fork the way cold fudge does. A slice settles it in one sitting.

The Black & White Chocolate Mousse arrives from the other direction, double chocolate mousse over a flourless brownie base. Heavy, then weightless, in one mouthful. Made with no added gluten, though our kitchen is small and without exclusive production areas for all of our different recipes, so traces may occur and nothing is guaranteed safe for severe coeliac disease. Come and eat it warm

The Matilda needs no notice, so a first visit can be a walk-in. Anything ordered online for collection needs two days, and the checkout date picker only offers dates the kitchen can meet. Collection is in person from The Welder on Welles Street; we do not deliver. Open 10am to 6pm Tuesday to Friday and 10am to 3pm Saturday.
